These cubes are especially good in a salad of mixed greens and grilled vegetables.

8 oz. steamed tempeh, in 1/2-inch cubes
2 tbsp. lower-sodium soy sauce
1 tsp. sesame oil
½ tsp. dried tarragon
½ tsp. garlic powder
¼ tsp. black pepper

Directions

  1. Steam tempeh by simmering it in water or flavored broth for about 20 minutes before using.
  2. Preheat oven to 350 degrees. Put tempeh cubes in medium bowl.
  3. In small bowl, whisk together soy sauce, sesame oil, tarragon, garlic powder and black pepper. Pour over tempeh cubes and toss to coat well.
  4. Put cubes onto a nonstick or lightly oiled baking sheet and bake at 350 degrees for 20 minutes, stirring once.
  5. Cool cubes and toss into mixed green salad. Store leftover cubes in the refrigerator.
