¼ c. unsalted butter or unsalted margarine, softened
¼ c. white sugar
1 large egg, beaten
grated rind of 1 lemon
¾ c. sifted rice flour
additional rice flour


  1. Cream butter and sugar. Beat in egg and lemon rind.
  2. Stir in rice flour with a wooden spoon. Let stand for 3 to 4 minutes. Stir again.
  3. Roll out dough thinly on a rice-floured surface. Cut into squares or cut out with cookie cutters. Place wafers on an ungreased cookie sheet.
  4. Bake at 350 degrees for 6 to 8 minutes. Check after 4 minutes so as not to brown or burn.
  5. Cool wafers on wire rack.
