2 large egg whites
2 tbsp. water
4 c. gluten-free snack mix (such as Barbecue Party Mix)
4 c. broken (1/2-inch pieces) Full Circle BBQ soy crisps

Directions

  1. Preheat the oven to 325 degrees. Whisk the egg whites and 2 tablespoons water in a large bowl until bubbles begin to form (Alternatively, you may use a hand mixer). Add the snack mix and BBQ soy crisps. Using your clean hands, toss until evenly coated.
  2. Generously spray a 3-quart ovenproof bowl with cooking spray and place the snack mix in it.
  3. Using a large sheet of aluminum foil, mold a ball shape about one-third the size of the 3-quart bowl. Coat the outside of the foil bowl very well with cooking spray. Press ball into the snack mix to make a well in the middle.
  4. Use one hand to hold down the ball and use your fingertips on your other hand to “smoosh down” the mixture into the bowl so that it is tightly compacted. Be careful not to allow the sides of the mixture to come up and over the foil ball, as you'll need to be able to easily lift the ball out of the center and you don't want to break the side of the bowl when doing so.
  5. Place the bowl with the foil in the oven and bake until the snack mix sets, 30 minutes. Remove and let cool slightly, 5 minutes. Carefully lift out the foil. Cool for another 30 more minutes. Invert the edible bowl onto a plate and cool completely. Fill with your favorite gluten-free snack mix (such as Barbecue Party Mix) or get creative and stuff with chicken, egg or potato salad.
