    1 baby pumpkin
    ½ tsp. Hy-Vee unsalted butter or margarine
    ½ tsp. brown sugar
    ½ tsp. cinnamon, divided
    1/4 to 1/2 c. Hy-Vee unsweetened applesauce, depending on size of the pumpkin

    Directions

    1. Preheat oven to 375 degrees.
    2. Cut top off pumpkin with a paring knife. Scoop out all the pumpkin seeds.
    3. Place butter in bottom of pumpkin followed by brown sugar and 1/4 teaspoon cinnamon. Add applesauce; add remaining 1/4 teaspoon cinnamon. Place top back on pumpkin and bake for 45 to 60 minutes, or until pumpkin flesh is tender.
    4. Remove lid and allow to cool for at least 30 minutes. Remove pumpkin “meat” from shell. Mix pumpkin “meat” with applesauce and enjoy!
