BBQ Chicken Salad Bowl
Servings and Ingredients
|1 (8 oz) pkg Hy-Vee Select Ruby Wild Blend|
|2 c. shredded rotisserie chicken meat|
|½ c. Hy-Vee barbecue sauce|
|½ c. Hy-Vee plain Greek yogurt|
|½ c. Hy-Vee mayonnaise|
|1 c. roughly chopped red bell pepper|
|1 c. Hy-Vee frozen corn kernels, thawed|
|6 c. chopped romaine lettuce|
- Cook rice according to package directions. Drain excess liquid and cool completely.
- Place the chicken and cooled rice in a large bowl. In a smaller bowl, whisk together the barbeque sauce, yogurt and mayonnaise. Pour over the chicken and rice, blending well. In a separate bowl, combine the bell pepper and corn and mix well.
- To build the salad bowls, place lettuce in the bottom of each bowl. Top with chicken mixture and bell pepper mixture.
