Preheat broiler on HIGH. Line two large baking sheets with foil; set aside.
Preheat griddle or large nonstick skillet over medium heat. Brush lightly with oil. Drop 1/4-cup portions of batter on hot griddle. Spread batter, if necessary. Cook 1 to 2 minutes or until bubbles break on surface. Turn and cook 1 to 2 minutes or until golden.
Broil 4-inches from heat for 1 to 3 minutes or until cheese is melted. Decorate as desired.
