Serves 5
3 c. sliced sweet potatoes (1/2-inch rounds)
2 ½ c. cauliflower florets
2 c. halved Brussels sprouts
3 tbsp. coconut oil, melted*
3 tbsp. maple syrup
½ tsp. sea salt
½ tsp. freshly ground black pepper
¼ tsp. garlic powder


  1. Preheat oven to 350 degrees.
  2. Place sweet potatoes, cauliflower florets and Brussels sprouts in baking dish.
  3. Combine coconut oil, maple syrup, sea salt, black pepper and garlic powder in small bowl.
  4. Pour over vegetables in baking dish and stir.
  5. Bake in oven until tender, about 40 minutes, stirring after 20 minutes.
  6. *Tip: Use butter or any other heat-stable oil.
