Fiery Oven-Roasted Vegetables
Servings and Ingredients
|2||Hy-Vee russet potatoes, unpeeled, cut into 1-inch cubes|
|1||sweet potato, unpeeled, cut into 1-inch cubes|
|½ c.||Hy-Vee baby carrots|
|⅓ c.||fat-free Italian dressing|
|⅛ tsp.||cayenne pepper|
|cracked black pepper to taste|
|sea salt to taste|
- Place potatoes and carrots in a re-sealable plastic bag. Add dressing and cayenne pepper to vegetables. Seal bag and toss gently to coat.
- Pour onto a greased baking sheet. Bake at 425 degrees for 40 to 45 minutes, stirring gently half-way through.
- Season with black pepper and salt before serving.
