1 sweet potato, unpeeled, cut into 1-inch cubes | ||
½ c. Hy-Vee baby carrots | ||
⅓ c. fat-free Italian dressing | ||
⅛ tsp. cayenne pepper | ||
cracked black pepper to taste | ||
sea salt to taste |
Directions
- Place potatoes and carrots in a re-sealable plastic bag. Add dressing and cayenne pepper to vegetables. Seal bag and toss gently to coat.
- Pour onto a greased baking sheet. Bake at 425 degrees for 40 to 45 minutes, stirring gently half-way through.
- Season with black pepper and salt before serving.
