2 Hy-Vee russet potatoes, unpeeled, cut into 1-inch cubes
1 sweet potato, unpeeled, cut into 1-inch cubes
½ c. Hy-Vee baby carrots
⅓ c. fat-free Italian dressing
⅛ tsp. cayenne pepper
cracked black pepper to taste
sea salt to taste

Directions

  1. Place potatoes and carrots in a re-sealable plastic bag. Add dressing and cayenne pepper to vegetables. Seal bag and toss gently to coat.
  2. Pour onto a greased baking sheet. Bake at 425 degrees for 40 to 45 minutes, stirring gently half-way through.
  3. Season with black pepper and salt before serving.
