    ½ c. red wine vinegar
    ⅓ c. lemon juice
    ¼ c. soy sauce
    1 tsp. fresh minced garlic
    ½ tsp. seasoning salt
    Black pepper, to taste
    1 (5 lb) bone-in leg of lamb

    Directions

    1. In a medium bowl, mix together vinegar, lemon juice, soy sauce, garlic, seasoning salt and black pepper. Set aside.
    2. Place leg of lamb on a rack in a shallow roasting pan. Insert a meat thermometer into thickest part of meat without touching bone.
    3. Baste leg with vinegar mixture while roasting in a 300-degree oven for 2 to 2-1/2 hours or until thermometer registers 140 degrees F for medium-rare doneness or 155 degrees F for medium doneness.
