|⅔ c. Hy-Vee sour cream, divided|
|1 ½ tbsp. fresh chives, chopped|
|1 (15-oz.) container fully cooked seasoned shredded beef in barbecue sauce|
|½ c. bottled Hy-Vee beef gravy|
|½ c. finely shredded sharp Cheddar cheese|
|4 Basket & Bushel grape tomatoes, for garnish|

Meanwhile, stir together beef in barbecued sauce and gravy in a medium microwave-safe bowl. Cover and microwave on HIGH 3 minutes or until heated through, stirring halfway through.
To assemble, spoon about half of the beef mixture into 4 (12-oz. each) heat-resistant glasses or shallow serving bowls. Top with scoops of mashed potatoes; spoon remaining beef mixture over potatoes.
