    Serves 6
    8 oz. Hy-Vee part-skim ricotta cheese
    4 oz. mascarpone cheese
    4 oz. Hy-Vee honey goat cheese
    3 tsp. Hy-Vee honey, divided
    ½ tsp. Kosher salt
    6 fresh peaches, halved
    4 sprigs fresh thyme, divided
    ¼ c. chopped pistachios

    Things To Grab

    • Charcoal or gas grill
    • Food processor
    • Hy-Vee nonstick cooking spray


    1. Preheat a charcoal or gas grill for direct cooking over medium-low heat. 

    2. Combine all three cheeses and 1 teaspoon honey in a food processor. Blend until well combined and fluffy. 

    3. Lightly spray the cut sides of the peaches with cooking spray. 

    4. Place peaches cut-side-down and grill for 5 minutes or until surface begins to blister. 

    5. Remove peaches from grill and top with three-cheese blend. Drizzle with remaining 2 teaspoons honey, a sprinkle of thyme, and chopped pistachios.
