Preheat a charcoal or gas grill for direct cooking over medium-low heat.

|8 oz. Hy-Vee part-skim ricotta cheese|
|4 oz. mascarpone cheese|
|4 oz. Hy-Vee honey goat cheese|
|3 tsp. Hy-Vee honey, divided|
|½ tsp. Kosher salt|
|6 fresh peaches, halved|
|4 sprigs fresh thyme, divided|
|¼ c. chopped pistachios|

- Food processor
- Hy-Vee nonstick cooking spray
Combine all three cheeses and 1 teaspoon honey in a food processor. Blend until well combined and fluffy.
Lightly spray the cut sides of the peaches with cooking spray.
Place peaches cut-side-down and grill for 5 minutes or until surface begins to blister.
Remove peaches from grill and top with three-cheese blend. Drizzle with remaining 2 teaspoons honey, a sprinkle of thyme, and chopped pistachios.
