Green Beans with Shallots and Red Peppers
Servings and Ingredients
|1 lbs.||fresh green beans, washed and trimmed|
|1 tbsp.||Hy-Vee unsalted butter|
|1 tbsp.||Hy-Vee Select olive oil|
|1||large shallot, thinly sliced|
|1||small red bell pepper, seeded and thinly sliced|
|Hy-Vee pepper, to taste|
- Blanch green beans in boiling salted water for 3 minutes. Drain and place in ice water. Drain well and set aside.
- Heat butter and oil in a large skillet over medium heat. Cook shallot and red pepper for 5 to 10 minutes until shallots and peppers are beginning to turn brown and have slightly softened.
- Add beans to skillet and toss until heated through. Season to taste with salt and pepper.
