Serves 8
1 lbs. fresh green beans, washed and trimmed
Hy-Vee salt
1 tbsp. Hy-Vee unsalted butter
1 tbsp. Hy-Vee Select olive oil
1 large shallot, thinly sliced
1 small red bell pepper, seeded and thinly sliced
Hy-Vee pepper, to taste


  1. Blanch green beans in boiling salted water for 3 minutes. Drain and place in ice water. Drain well and set aside.
  2. Heat butter and oil in a large skillet over medium heat. Cook shallot and red pepper for 5 to 10 minutes until shallots and peppers are beginning to turn brown and have slightly softened.
  3. Add beans to skillet and toss until heated through. Season to taste with salt and pepper.
