2 medium green tomatoes, sliced 1/4-inch thick
salt, to taste
¼ c. gluten-free cornmeal
¼ c. grated Parmesan cheese
2 tbsp. gluten-free baking mix
¾ tsp. garlic salt
½ tsp. crushed leaf oregano
⅛ tsp. black pepper
1 egg, beaten
¼ c. corn oil


  1. Sprinkle tomato slices with salt. Allow to drain on paper towels for 30 to 60 minutes.
  2. Meanwhile, combine cornmeal, Parmesan cheese, baking mix, garlic salt, oregano and pepper on a shallow plate.
  3. Dip each tomato slice into the beaten egg, then into the cornmeal mixture.
  4. In a medium skillet, heat oil on medium-high.
  5. Fry tomato slices for 2 minutes on each side, or until golden brown.
  6. Drain slices on a wire rack covered with paper towels.
  7. Serve while hot.
