Sauteed Green Beans with Grape Tomatoes
Servings and Ingredients
|1 tbsp. olive oil|
|1 large shallot, thinly sliced|
|8 oz. trimmed green beans|
|2 tbsp. reduced-sodium vegetable broth|
|½ c. halved grape tomatoes|
|¼ tsp. kosher salt|
|¼ tsp. freshly ground black pepper|
|Juice of 1/2 lemon|
|5 large basil leaves, thinly sliced|
- Heat oil in large skillet over medium heat. Add the shallots and saute for 2 to 3 minutes.
- Add green beans and stir. Add broth; cover and steam for 2 to 3 minutes, until beans turn bright green and are tender-crisp (al dente).
- Add the grape tomatoes. Cover and steam for 1 minute. Uncover and continue to cook until the grape tomatoes are just beginning to soften, about 2 minutes. Add salt and pepper.
- Stir in lemon juice and basil before serving.
