Description
There's nothing more American than stuffing something with cheese, wrapping it in bacon, and throwing it on the grill. This July 4th, try our mozzarella-stuffed beer brats wrapped in (you guessed it) bacon!

- 12-inch cast iron skillet
- Meat thermometer
Directions
Cut a 5-inch lengthwise slit, about 1/2-inch deep, down the center of each bratwurst. Stuff each with a pieces of string cheese; pinch bratwurst closed to completely cover the cheese.
Beginning at one end of each bratwurst, wrap 2 bacon slices around each bratwurst in a single layer. Secure with 3 to 4 wooden toothpicks.
Place a 12-iinch cast iron skillet on grill rack for 2 to 3 minutes. Place wrapped bratwurst in skillet. Cook 15 to 20 minutes or until bratwurst reach 165 degrees and bacon begins to crisp, turning frequently. Meanwhile, grill buns, cut sides down, for 30 to 60 seconds, or until toasted.
Transfer bratwursts to a plate; let stand 3 to 4 minutes. Remove toothpicks from bratwursts; serve in buns with mustard and kraut, if desired.
