Apple Pie Preserves
Make an easy homemade dessert by spooning these preserves into pastry to create apple turn overs, or spoon on top of waffles and pancakes for a tasty breakfast.
Servings and Ingredients
|2 lbs.||apples, peeled, cored and finely chopped (about 6 cups)|
|2 c.||Hy-Vee 100% apple juice|
|1 tbsp.||Hy-Vee lemon juice|
|2 ¼ c.||Hy-Vee granulated sugar, divided|
|1||(1.75 oz) pkg powdered fruit pectin for less- or no-sugar-needed recipes|
|1 ½ tsp.||Hy-Vee ground cinnamon|
|¼ tsp.||ground nutmeg|
|½ tsp.||Hy-Vee butter|
- In a large saucepan or Dutch oven, combine apples, apple juice and lemon juice. Bring to boiling; reduce heat to medium and simmer about 12 minutes or until apples are soft.
- In a separate bowl, stir together 1/4 cup granulated sugar, fruit pectin, cinnamon and nutmeg; stir into apple mixture. Return to boiling. Stir in remaining sugar and butter. Return to boiling once again. Remove from heat. Ladle into sterilized jars, leaving 1/4-inch headspace. Process in boiling water bath for 10 minutes (after water has returned to full boil).
