    1 ⅔ c.Hy-Vee skim milk
    1 c.Anderson Erickson apple pie yogurt
    ¼ c.Hy-Vee vegetable oil
    2 ½ c.Hy-Vee flour
    1 tsp.Hy-Vee baking powder
    ½ tsp.Hy-Vee baking soda
    ¼ tsp.Hy-Vee salt
    1 tsp.Hy-Vee ground cinnamon
    ½ tsp.Hy-Vee ground ginger
    ½ tsp.ground cardamom
    1 ½ c.Hy-Vee apple pie filling, divided
    ¾ c.Hy-Vee whipped topping, thawed, divided

    Directions

    1. In a large bowl, stir together eggs, milk, yogurt and oil.
    2. In a medium bowl, stir together flour, baking powder, soda, salt, cinnamon, ginger and cardamom. Stir flour mixture into milk mixture until smooth.
    3. Heat a lightly oiled griddle over medium-high heat. Pour 1/4 cup batter onto griddle for each pancake. Cook until bubbles form in the cakes and bottoms are golden brown. Flip. Cook the other side until golden.
    4. To serve, top two pancakes with 1/4 cup apple pie filling and 2 tablespoons whipped topping.
