Almond-Topped Fruit Salad

1 (8 oz) pkg DeBoles rice spirals | ||
2 (8 oz each) containers Hy-Vee low-fat cherry vanilla yogurt | ||
¼ c. Hy-Vee honey | ||
½ tsp. Hy-Vee ground ginger | ||
½ tsp. Hy-Vee ground cinnamon | ||
1 (20 oz) can Hy-Vee pineapple chunks, drained | ||
1 c. sliced strawberries | ||
1 c. blueberries | ||
1 (11 oz) can Hy-Vee mandarin oranges, drained | ||
¼ c. Hy-Vee sliced almonds, toasted |
Directions
- Cook spirals according to package directions. Drain. Rinse with cold water to cool. Drain.
- Stir together spirals, yogurt, honey, ginger and cinnamon.
- Gently stir in pineapple chunks, strawberries, blueberries and oranges. Cover and refrigerate until serving.
- Just prior to serving, sprinkle with almonds.
