Veggie Reuben Sandwich

|¼ c.||light mayonnaise|
|2 tsp.||Hy-Vee ketchup|
|2 tsp.||Hy-Vee sweet pickle relish|
|8 slice(s)||marbled rye bread|
|1||large cucumber, thinly sliced|
|2||large Roma tomatoes, thinly sliced|
|1||large green bell pepper, seeded, thinly sliced into rings|
|1||small red onion, thinly sliced, separated into rings|
|1 c.||Hy-Vee sauerkraut, rinsed and drained|
|4||thin slices reduced-fat Swiss cheese|
- Preheat broiler. For dressing, in a small bowl combine mayonnaise, ketchup and relish. Spread on one side of 4 bread slices. Place bread, dressing side up, on a broiler pan. Top each with one-fourth of the cucumber, tomato, bell pepper and onion; top evenly with one-fourth of the sauerkraut.
- Place 1 slice of cheese on each of the remaining 4 bread slices. Place cheese side up on broiler pan.
- Broil 4 inches from heat about 1 minute or until cheese melts. Close sandwiches and broil 1 minute more per side or until bread is lightly toasted. Cut sandwiches in half, and serve.
