    Freshen up your holiday party with a two-in-one appetizer—this appetizer platter is a delicious take on a classic shrimp cocktail, with the addition of beautiful crudités.

    2 ½ c. tightly packed baby arugula
    ½ medium head radicchio, leaves separated
    1 medium head endive, leaves separated
    6 yellow, orange and/or purple carrots, peeled and cut into 4-in. sticks
    1 c. cherry tomatoes
    1 c. pitted mixed olives, drained
    ½ c. BelGioioso fresh mozzarella cheese ciliegine (cherry-size balls)
    1 lemon, cut into wedges
    6 red radishes, halved
    1 lbs. tail-on, peeled & deveined raw Argentine red shrimp (16 to 25 ct.), cooked and cooled
    Stonewall Kitchen New England cocktail sauce, for serving
    Tarragon Sauce
    1 (0.8-oz.) pkg. fresh basil, stems removed
    3 tbsp. chopped fresh tarragon
    ½ c. Gustare Vita olive oil
    3 tsp. tarragon vinegar
    Coarsely ground Hy-Vee sea salt, to taste
    Coarsely ground Hy-Vee pepper, to taste

    Directions

    1. Place a small (6-in.) bowl in the center of a medium (16-in.) bowl. Place both bowls in the center of a large (32-in.) platter.

    2. Line the edge of the platter with arugula, radicchio, endive and carrots. Top with cherry tomatoes, olives, mozzarella cheese, lemon wedges and radishes.

    3. For tarragon sauce, place basil, tarragon, olive oil and tarragon vinegar in a food processor. Cover and process until smooth. Season to taste with salt and pepper.

    4. To serve, place half the tarragon sauce in medium bowl; place the cocktail sauce in  small bowl. Arrange shrimp around the inside edge of medium bowl. Drizzle shrimp with remaining tarragon sauce.
