    1 (16-oz.) pkg. Gustare Vita original potato gnocchi
    4 slice(s) Hy-Vee sweet-smoked thick-sliced bacon, cut into 1/2-inch pieces
    1 ½ c. thinly sliced celery
    ¼ c. Gustare Vita white wine vinegar
    2 tbsp. Gustare Vita extra virgin olive oil
    1 tbsp. Hy-Vee spicy brown mustard
    1 tsp. Hy-Vee granulated sugar
    ½ tsp. Hy-Vee salt
    ½ tsp. Hy-Vee ground black pepper
    Italian parsley, chopped, for garnish

    1. Cook gnocchi according to package directions; drain and set aside. 

    2. Meanwhile, cook bacon in a large skillet over medium heat 10 minutes or until crisp, stirring occasionally. Remove bacon with a slotted spoon; drain on paper towels.

    3. Add onions to bacon drippings in skillet. Cook over medium heat 7 minutes or until softened, stirring often.

    4. Stir in celery, vinegar, olive oil, mustard, sugar, salt, and pepper. Remove from heat. Add cooked gnocchi to skillet; toss to coat. Add cooked bacon; toss to combine. Garnish with parsley, if desired.
