    2 large green bell peppers
    1 medium sweet onion
    6 oz. baby bella mushrooms
    2 tbsp. olive oil
    1 tbsp. minced garlic
    Ground black pepper, to taste
    8 oz. Di Lusso roast beef
    4 slice(s) provolone cheese, cut in half


    1. Slice bell peppers in half lengthwise and remove seeds and ribs.
    2. Slice onions and mushrooms. Sauté over medium heat with olive oil, minced garlic and black pepper. Sauté until onions and mushrooms are nice and caramelized, about 25 to 30 minutes.
    3. Preheat oven to 400 degrees.
    4. Slice roast beef into thin strips and add to onion and mushroom mixture. Allow to cook for 5 minutes.
    5. Place half slice of cheese on bottom of each pepper. Fill each bell pepper with meat mixture until they are nearly overflowing. Top each pepper with half slice of cheese.
    6. Bake at 400 degrees for 15 to 20 minutes until cheese on top is golden brown.
