½-in.-wide bell pepper ring, or desired veggie like tomato or onion
1 large Hy-Vee egg
Hy-Vee salt
Hy-Vee black pepper
English muffin, toasted; for serving
Hy-Vee crushed red pepper, if desired

Directions

  1. Heat basil pesto in a small skillet over medium-low heat. Place a bell pepper ring (or desired veggie ring) in the center of the skillet. Crack egg directly into bell pepper ring. Cover skillet and cook for 2 to 3 minutes or until egg is cooked through. 

  2. Season to taste with salt and pepper. Serve on toasted English muffin half and sprinkle with red pepper, if desired.
