Directions
Place 1 cup heavy whipping cream, vanilla, and salt in the bowl of a stand mixer. Using the whisk attachment, beat until soft peaks form. Fold whipped cream into melted dark chocolate about 1/3 of a time being careful not to over mix.
Place mixture into a large resealable plastic bag or piping bag and pipe mixture into the bottom of four 4-oz. each glass serving dishes. Cover dishes; cover and chill.
Make Caramel Chocolate Mousse: Place melted and cooled caramel milk chocolate in a medium bowl; set aside.
Place 3/4 cup heavy whipping cream in the bowl of a stand mixer. Using the whisk attachment, beat until soft peaks form. Fold whipped cream into melted milk chocolate about 1/3 of a time being careful not to over mix.
Place mixture into a large resealable plastic bag or piping bag and pipe mixture over dark chocolate layer in serving glasses. Store mousse in refrigerator until ready to serve. Just before serving, garnish with unsweetened whipped cream and additional chocolate chips, if desired.
