Description

This fluffy dessert makes a delightful sweet finale to any meal. The mandarin can be substituted with regular orange or even grapefruit.

½ c. Hy-Vee low-fat cottage cheese, drained
¼ c. Hy-Vee low-fat vanilla yogurt
3 tbsp. Hy-Vee orange juice
1 tbsp. Hy-Vee honey
Hy-Vee salt
4 Hy-Vee egg whites (pasteurized liquid egg whites)
¼ c. Hy-Vee sugar
½ c. chopped fresh mandarin oranges, plus additional orange segments for serving
Fresh mint sprigs, for garnish

Directions

  1. In a food processor or blender, combine cottage cheese, yogurt, orange juice, honey and salt. Cover and process until smooth; set aside.
  2. In a large mixing bowl, beat egg whites with an electric mixer until soft peaks form (tips curl). Gradually add sugar and continue beating until stiff peaks form (tips stand straight).
  3. Fold beaten whites into cottage cheese mixture. Fold in chopped oranges.
  4. To serve, top with orange sections. If desired, garnish with mint.
