    2 tbsp. olive oil
    3 clove(s) garlic, thinly sliced
    ½ tsp. ground cumin
    ½ tsp. dried oregano
    3 tbsp. fresh lime juice
    salt, to taste
    freshly ground black pepper, to taste
    1 (1-inch thick) bone-in pork chop, about 10 oz

    Directions

    1. Heat olive oil in a small frying pan over medium heat.
    2. Add garlic, cumin and oregano. Cook until the garlic is just beginning to brown, about 20 to 30 seconds. Immediately add the lime juice and bring to a boil. Boil until slightly thickened, 1 to 2 minutes. Add salt and pepper to taste. Cool to room temperature.
    3. Place the pork chop in a shallow bowl. Pour half the sauce on top of chop. Place the other half of sauce in the refrigerator.
    4. Turn the pork chop to coat the meat. Cover and marinate in the refrigerator for 30 to 60 minutes.
    5. Transfer the chop to a plate, pour the sauce over and serve at once.
    6. Preheat grill or broiler. Discard marinade.
    7. Grill or broil the pork for 2 to 4 minutes per side, until internal temperature reaches 145 degrees.
    8. In a saucepan, reheat the remaining half of the sauce.
