1 lbs. boneless, skinless chicken breasts, cut into thin strips | ||
1 green bell pepper, seeded and cut into thin strips | ||

½ c. Hy-Vee shredded lettuce | ||
1 large tomato, coarsely chopped | ||

Directions
Heat oil in a large skillet over medium-high heat. Add chicken; cook 3 minutes, stirring frequently.
Add peppers and onion to skillet. Cook 5 to 6 minutes or until chicken is no longer pink and peppers and onion are slightly softened, stirring frequently. Stir in salsa; heat through.
Fill each shell with chicken mixture. Top with lettuce, tomato and salsa con queso, if desired.
