    1 c.Hy-Vee traditional refried beans, heated, divided
    8(6-inch) Hy-Vee soft taco-style flour tortillas
    8Hy-Vee hard taco shells
    1 tbsp.Gustare Vita extra virgin olive oil
    1 lbs.boneless, skinless chicken breasts, cut into thin strips
    1green bell pepper, seeded and cut into thin strips
    1red bell pepper, seeded and cut into thin strips
    1red onion, cut into thin wedges
    1 c.Hy-Vee salsa
    ½ c.Hy-Vee shredded lettuce
    1large tomato, coarsely chopped
    Hy-Vee salsa con queso, optional

    Directions

    1. Spread 2 tablespoons refried beans to within 1/2 inch of the edge of each soft tortilla. Place hard taco shells on refried beans in center of each tortilla. Wrap tortilla up sides of hard taco shells. Set aside.

    2. Heat oil in a large skillet over medium-high heat. Add chicken; cook 3 minutes, stirring frequently.

    3. Add peppers and onion to skillet. Cook 5 to 6 minutes or until chicken is no longer pink and peppers and onion are slightly softened, stirring frequently. Stir in salsa; heat through.

    4. Fill each shell with chicken mixture. Top with lettuce, tomato and salsa con queso, if desired.
