    1 small onion, thinly sliced
    1 tbsp. Gustare Vita olive oil
    2 (10-oz. each) cans Hy-Vee diced tomatoes and chipotle peppers, undrained
    1 tbsp. Hy-Vee cider vinegar
    2 c. shredded cooked chicken breast
    8 Hy-Vee hard taco shells, warmed according to package directions
    Hy-Vee shredded Mexican blend cheese, optional
    cilantro, chopped, optional

    Directions

    1. Heat olive oil in a large skillet over medium heat. Sauté onion until softened, about 5 minutes. Stir in tomatoes and vinegar. Simmer, stirring frequently, about 5 minutes or until thickened. Stir in chicken and heat through.

    2. Serve chicken taco filling in warmed shells topped with cheese and cilantro, if desired.
