2 whole chicken breasts, boned (about 1-1/2 pounds) | ||
1 tsp. grated orange peel | ||
1 medium orange, peeled and diced | ||
2 tsp. grated lemon peel | ||
1 tbsp. lemon juice | ||
2 tbsp. minced onion | ||
2 tbsp. chopped cilantro | ||
1 tsp. Spice Islands ground cumin seed | ||
½ tsp. salt | ||
1 large ripe avocado (or 2 small), diced |
Directions
- In non-metal pan or zip-top bag, combine lemon juice, oil, cumin, cayenne and salt.
- Add chicken, coating on both sides with marinade. Marinate 30 minutes in refrigerator.
- Meanwhile, in medium bowl, combine orange peel, diced orange, lemon peel, lemon juice, onion, cilantro, cumin and salt.
- Gently stir avocado into salsa mixture.
- Add cayenne to taste. Reserve salsa.
- Discard chicken marinade. Place chicken over medium-hot coals and grill 4 to 5 minutes on each side, or until done.
- Slice chicken breasts across the grain. Serve with avocado salsa.
