    2 tbsp. fresh lemon juice
    1 tbsp. vegetable oil
    2 tsp. Spice Islands ground cumin seed
    ¼ tsp. Spice Islands cayenne pepper
    ½ tsp. salt
    2 whole chicken breasts, boned (about 1-1/2 pounds)
    1 tsp. grated orange peel
    1 medium orange, peeled and diced
    2 tsp. grated lemon peel
    1 tbsp. lemon juice
    2 tbsp. minced onion
    2 tbsp. chopped cilantro
    1 tsp. Spice Islands ground cumin seed
    ½ tsp. salt
    1 large ripe avocado (or 2 small), diced

    Directions

    1. In non-metal pan or zip-top bag, combine lemon juice, oil, cumin, cayenne and salt.
    2. Add chicken, coating on both sides with marinade. Marinate 30 minutes in refrigerator.
    3. Meanwhile, in medium bowl, combine orange peel, diced orange, lemon peel, lemon juice, onion, cilantro, cumin and salt.
    4. Gently stir avocado into salsa mixture.
    5. Add cayenne to taste. Reserve salsa.
    6. Discard chicken marinade. Place chicken over medium-hot coals and grill 4 to 5 minutes on each side, or until done.
    7. Slice chicken breasts across the grain. Serve with avocado salsa.
