Description

Transport yourself to the vibrant streets of Brazil with this mouthwatering picanha-style grilled steak. We used a Top of Iowa beef sirloin steak which is a more commonly found than the traditional top of the rump beef cut.

2 tsp. Hy-Vee ground cumin
1 tsp. smoked paprika
2 (1-lb.) pkg. Hy-Vee Angus Reserve thick-cut boneless Top of Iowa beef sirloin steaks, outer fat untrimmed

Directions

  1. Whisk together olive oil, lime juice, 1 Tbsp. meat rub, garlic, brown sugar, cumin and paprika in a medium bowl; set marinade aside.

  2. Cut steaks lengthwise into 4 (1½-in.-thick) strips. Cut the strips in crosswise in half. Place steak strips in a large resealable bag. Pour marinade over steaks; seal bag. Turn bag to evenly coat steaks with marinade. Marinate in refrigerator for 2 to 12 hours, turning bag occasionally.

  3. Preheat a charcoal or gas grill for direct grilling over medium-high heat (375 degrees).

  4. Remove the steak strips from the marinade; discard marinade. Lightly pat steak strips to remove some of the marinade. Fold each strip into a “C” shape, with outer fat on outside; thread onto 12-in. metal skewers, using 3 or 4 pieces for each skewer. Season steaks with remaining 1 Tbsp. meat rub.

  5. Grill skewers for 15 to 20 minutes or until steak strips reach 130 degrees for medium-rare doneness, turning occasionally.

  6. Transfer skewers to a clean cutting board; loosely cover with foil. Let rest for 5 minutes. To serve, cut slices of beef from skewers or remove steaks from skewers and slice.
