    1 lbs. 93% lean fresh ground beef
    1 c. chopped yellow onion
    1 (0.87-oz.) pkg. Hy-Vee brown gravy mix
    1 c. water
    1 (12-oz.) pkg. frozen That’s Smart mixed vegetables
    1 c. Hy-Vee finely shredded Cheddar Jack cheese
    Coarsely ground Hy-Vee black pepper, to taste

    Directions

    1. Preheat oven to 425 degrees. Cut potatoes into 1/16-in.-thick slices using a mandolin with a hand guard. Place potato slices in a large microwave-safe bowl; cover with cold water. Microwave potatoes in water on HIGH for 6 to 8 minutes or until fork-tender. Drain well; return potatoes to bowl. Add oil and ½ tsp. salt; toss well to coat.

    2. Meanwhile, cook ground beef and onion in a shallow 3-qt. Dutch oven over medium-high heat for 6 to 8 minutes or until beef is browned and reaches 165 degrees, stirring occasionally to break into crumbles.

    3. Whisk together gravy mix and water in a small saucepan. Bring to a boil over medium-high heat; cook and whisk for 1 to 2 minutes or until thickened. Add gravy and frozen vegetables to beef mixture in Dutch oven; stir to combine.

       

    4. Arrange potato slices over top the beef mixture, working from the outside in and overlapping as needed. Bake, uncovered, for 40 to 45 minutes or until potato edges begin to brown. Remove from oven, sprinkle with cheese. Bake for 5 to 7 minutes more or until cheese is melted. Let stand for 10 to 15 minutes. Season to taste with additional salt and black pepper.
