    1. To brine fish, you will need a large nonmetallic bowl, 2-quarts warm water, 3/4 cup water salt, and 3/4 cup sugar.

    2. Dissolve salt and sugar in a bowl of water. Combine with any desired seasonings (such as barbecue spice, lemon pepper, chili powder, etc.) Let the solution cool to room temperature.

    3. Submerge fish in brine and refrigerate for 2 hours or overnight. Remove fish, thoroughly rinse and let air-dry in the refrigerator for 1 hour before smoking, grilling, or pan-searing.
