To brine fish, you will need a large nonmetallic bowl, 2-quarts warm water, 3/4 cup water salt, and 3/4 cup sugar.
To brine something means to soak it in saltwater. When it comes to seafood, this might seem counterintuitive... until you've tried it. Once you do, you'll see how much it enhances the flavor and improves the texture.
Dissolve salt and sugar in a bowl of water. Combine with any desired seasonings (such as barbecue spice, lemon pepper, chili powder, etc.) Let the solution cool to room temperature.
Submerge fish in brine and refrigerate for 2 hours or overnight. Remove fish, thoroughly rinse and let air-dry in the refrigerator for 1 hour before smoking, grilling, or pan-searing.
