⅓ c. shortening | ||
1 c. lightly packed brown sugar | ||
2 eggs | ||
1 tsp. vanilla | ||
1 ¼ c. all-purpose flour | ||
1 c. ground flax seed | ||
1 tsp. baking soda | ||
½ tsp. salt | ||
1 tsp. cinnamon | ||
¼ tsp. ground cloves | ||
½ tsp. nutmeg | ||
½ c. oatmeal | ||
1 c. raisins | ||
½ c. chopped citron peel or candied fruit | ||
½ c. chopped pecans |
Directions
- Preheat oven to 350 degrees.
- In a bowl, beat together shortening, brown sugar, eggs and vanilla.
- In a separate bowl, combine flour, ground flax, baking soda, salt, cinnamon, cloves and nutmeg. Gradually stir flour mixture into liquid mixture.
- Stir in oatmeal, raisins, citron or candied fruit and pecans. Mix until combined.
- Form into 1-inch balls. Place on a greased cookie sheet, leaving 2 inches between cookies.
- Bake at 350 degrees for 10 to 12 minutes.
- Remove cookies from baking sheet and cool on wire rack.
