    2 tbsp. olive oil, divided
    2 lbs. boneless fresh pork, cut into 1-inch cubes
    4 clove(s) garlic, minced
    1 (29 oz) can tomatoes, undrained
    ½ tsp. dried basil
    1 tsp. dried oregano
    ¼ tsp. dried thyme
    salt and pepper, to taste
    ½ c. dry white wine
    1 large onion, peeled and sliced
    1 medium sweet red bell pepper, seeded and sliced
    1 medium green pepper, seeded and sliced

    Directions

    1. Heat 1 tablespoon oil in a large heavy skillet over medium-high heat.
    2. Add pork and garlic. Cook and stir to brown pork, about 4 to 5 minutes. Add tomatoes, basil, oregano, thyme, salt, pepper and white wine.
    3. Reduce heat, cover tightly and simmer until pork is tender, about 12 to 15 minutes.
    4. Meanwhile, saute onion and peppers in remaining 1 tablespoon oil in large skillet, about 3 minutes.
    5. Add onion mixture to pork mixture. Blend gently and simmer for 2 to 3 minutes.
