    ¼ tsp. lemon pepper
    4 (4 oz each) salmon fillets (thawed, if frozen)
    2 tbsp. Hy-Vee Select olive oil, divided
    1 small red onion, chopped
    2 garlic cloves, minced
    ¼ c. chopped sun-dried tomatoes
    ⅓ c. fresh lemon juice
    2 tbsp. goat cheese

    Directions

    1. Preheat oven to 400 degrees. Lightly coat shallow baking dish with nonstick cooking spray. Place fish skin-side-down in baking dish. Sprinkle fish with lemon pepper; drizzle with 1 tablespoon of the olive oil; set aside.
    2. Heat remaining 1 tablespoon olive oil in medium skillet over medium-high heat. Add onion and garlic and sauté 5 minutes or until tender. Remove from heat and stir in sun-dried tomatoes and lemon juice. Pour over salmon.
    3. Bake 15 to 20 minutes or until fish flakes with fork. Sprinkle with goat cheese; bake 5 minutes more.
