Directions
Add purple potatoes and simple syrup to a blender, blend until smooth. Cover and refrigerate until ready to use.
For a Pink Cocktail: Combine Pisco, Purple Potato Puree, lime juice, and cilantro leaves in an ice-filled cocktail shaker. Shake thoroughly until well combined and chilled. Strain into a cocktail glass filled with crushed ice. Garnish with additional cilantro leaves, if desired.
