    2 c. water
    2 c. Hy-Vee granulated sugar
    5 purple potatoes, washed and halved
    Pink and Purple Potato Cocktails
    1 ½ oz. Pisco liquor, or clear brandy
    1 oz. Purple Potato Puree
    1 oz. pineapple juice, for purple cocktails only
    ¼ oz. fresh lime juice
    4 sprig(s) fresh cilantro, plus additional for garnish

    Directions

    1. Make Purple Potato Puree: In a small saucepan over medium heat, whisk sugar into water until dissolved. Add purple potatoes, cook an additional 5 to 10 minutes or until mixture turns a deep purple. Remove from heat; cool slightly.

    2. Add purple potatoes and simple syrup to a blender, blend until smooth. Cover and refrigerate until ready to use.

    3. For a Pink Cocktail: Combine Pisco, Purple Potato Puree, lime juice, and cilantro leaves in an ice-filled cocktail shaker. Shake thoroughly until well combined and chilled. Strain into a cocktail glass filled with crushed ice. Garnish with additional cilantro leaves, if desired. 

    4. For a Purple Cocktail: Combine Pisco, Purple Potato Puree, pineapple juice, lime juice, and cilantro in an ice-filled cocktail shaker. Shake thoroughly until well combined and chilled. Strain into a cocktail glass filled with crushed ice. Garnish with additional cilantro leaves, if desired.
