⅓ c. extra virgin olive oil
½ c. acidic liquid (vinegar, citrus juice or wine)
2 tbsp. water
1 tbsp. minced shallot or onion
1 garlic clove, minced
1 tsp. honey or clear agave nectar, optional
2 tsp. dried herbs
½ tsp. sea salt
Freshly ground pepper, to taste


  1. Whisk all ingredients together in a bowl until well combined. Store in refrigerator for up to 3 days.
  2. Tips:
  3. Add 2 teaspoons of Dijon mustard as an emulsifier if desired.
  4. Try assorted herbs and spices for a variety of tasty flavors. Some delicious ideas include oregano, rosemary, parsley, Italian blends, lemon pepper, etc.
