Serves 4
1 small jicama, peeled and cut into matchstick-size pieces
¼ medium red bell pepper, chopped
1 medium green onion, white part thinly sliced and green part cut into short, thin strips
2 sprigs fresh cilantro, coarsely chopped
¼ tsp. grated lemon zest
¼ tsp. grated lemon zest
¼ tsp. grated orange zest
1 tbsp. fresh lemon juice
1 tbsp. fresh lime juice
1 tbsp. fresh orange juice
1 tsp. canola oil
1 tsp. honey
¼ tsp. chili powder
¼ tsp. salt
⅛ tsp. white pepper


  1. In a large bowl, stir together the jicama, bell pepper, green onion and cilantro.
  2. In a small bowl, whisk together the remaining ingredients. Pour over the salad, tossing to coat.
