    1 c. uncooked Hy-Vee multigrain pasta
    1 (16 oz) bag Hy-Vee Fiesta Blend vegetables
    2 tsp. Hy-Vee Select olive oil
    1 lbs. pork chops, trimmed and cut into thin strips
    ½ c. Hy-Vee mild salsa
    ½ c. Hy-Vee light ranch dressing

    Directions

    1. Cook pasta according to package directions. Add vegetables during the last 5 minutes of cooking. Drain well.
    2. Meanwhile, heat oil in a large, non-stick skillet over medium-high heat.
    3. Add pork and saute until golden brown and internal temperature reaches at least 145 degrees, about 6 minutes.
    4. Stir in pasta and vegetables. Reduce heat to low.
    5. Combine salsa and ranch dressing and add to skillet.
    6. Serve hot.
