Directions
Heat oil in a medium nonstick skillet over medium-high heat. Add chicken; cook for 15 minutes or done (165 degrees) turning halfway through. Transfer to a cutting board; let rest for 5 minutes. Cut into cubes.
Cook macaroni according to package directions. Drain, reserving 1/4 cup pasta water; set aside. Wipe out skillet.
Whisk together yogurt and flour in the same saucepan. Heat over medium-low heat. Stir in 3/4 cup Cheddar and Pecorino-Romano cheese. Reduce heat to low; cook and stir until cheeses are melted. Stir in pasta, spinach, and chicken. Cook over low heat until heated though, adding reserved pasta water, if necessary to thin mixture. Garnish with additional Cheddar cheese, if desired.
