    1 (16 oz) pkg Hy-Vee coleslaw mix
    1 medium red pepper, chopped
    1 medium yellow pepper, chopped
    ½ medium yellow zucchini, julienned
    1 medium shallot, finely chopped
    1 tbsp. Hy-Vee Select white wine vinegar
    1 tbsp. Hy-Vee granulated sugar
    ⅔ c. garlic ranch dressing

    Directions

    1. In a large bowl, stir together coleslaw mix, peppers, zucchini, shallot, vinegar, sugar and dressing.
    2. Cover and refrigerate 2 to 3 hours.
