Description
For a refreshing take on tilapia, top it with lightly sautéed orange slices.

3 tbsp. flour mixed with salt and pepper to taste | ||
4 (4 oz each) tilapia fillets | ||
2 tbsp. Hy-Vee canola oil | ||
¼ c. minced shallots | ||
1 orange, peeled and separated into sections | ||
½ red bell pepper, roasted and minced |
Directions
- Lightly dredge fillets in seasoned flour, shaking off any excess. Set aside.
- Heat oil in large skillet over high heat. Brown tilapia 3 to 4 minutes on each side until fish flakes with a fork. Remove fish to ovenproof platter and place in warm oven while making sauce.
- To prepare orange sauce use same skillet, placed over medium heat; cook shallots until wilted, about 2 minutes. Add orange sections and stir, cooking about 3 minutes. Add bell pepper and stir to mix.
- Remove fish from oven. Pour orange sauce over fish. Serve immediately.
