    For a refreshing take on tilapia, top it with lightly sautéed orange slices.

    Serves 4

    3 tbsp. flour mixed with salt and pepper to taste
    4 (4 oz each) tilapia fillets
    2 tbsp. Hy-Vee canola oil
    ¼ c. minced shallots
    1 orange, peeled and separated into sections
    ½ red bell pepper, roasted and minced

    Directions

    1. Lightly dredge fillets in seasoned flour, shaking off any excess. Set aside.
    2. Heat oil in large skillet over high heat. Brown tilapia 3 to 4 minutes on each side until fish flakes with a fork. Remove fish to ovenproof platter and place in warm oven while making sauce.
    3. To prepare orange sauce use same skillet, placed over medium heat; cook shallots until wilted, about 2 minutes. Add orange sections and stir, cooking about 3 minutes. Add bell pepper and stir to mix.
    4. Remove fish from oven. Pour orange sauce over fish. Serve immediately.
