½ c. soy milk, warmed | ||
⅓ c. brown sugar | ||
¼ c. applesauce | ||
2 egg whites | ||
6 tbsp. grated fresh ginger OR 2 tsp ground ginger | ||
⅔ c. all-purpose flour | ||
½ c. whole wheat flour | ||
⅓ c. soy flour | ||
1 tsp. baking soda | ||
½ tsp. cinnamon | ||
½ tsp. allspice |
Directions
- Using electric mixer, beat together molasses, soy milk, brown sugar, applesauce, egg whites and ginger.
- Whisk together all-purpose flour, whole wheat flour, soy flour, baking soda, cinnamon and allspice. Add to the liquid ingredients and beat just until smooth.
- Pour into nonstick or lightly greased 8-inch square pan. Bake at 350 degrees about 30 minutes, until center tests done and edges pull away from the sides of the pan.
- Cut into 9 squares and serve warm or at room temperature.
