    ½ c. molasses
    ½ c. soy milk, warmed
    ⅓ c. brown sugar
    ¼ c. applesauce
    2 egg whites
    6 tbsp. grated fresh ginger OR 2 tsp ground ginger
    ⅔ c. all-purpose flour
    ½ c. whole wheat flour
    ⅓ c. soy flour
    1 tsp. baking soda
    ½ tsp. cinnamon
    ½ tsp. allspice

    Directions

    1. Using electric mixer, beat together molasses, soy milk, brown sugar, applesauce, egg whites and ginger.
    2. Whisk together all-purpose flour, whole wheat flour, soy flour, baking soda, cinnamon and allspice. Add to the liquid ingredients and beat just until smooth.
    3. Pour into nonstick or lightly greased 8-inch square pan. Bake at 350 degrees about 30 minutes, until center tests done and edges pull away from the sides of the pan.
    4. Cut into 9 squares and serve warm or at room temperature.
