Rebecca ForrestRebecca is your Liberty Hy-Vee dietitian! She received a Bachelor of Science degree in dietetics from the University of Nebraska-Lincoln and went on to complete her master's degree in Community Nutrition and Health Promotion from the University of Nebraska-Lincoln. She  completed her internship from the University of Nebraska-Lincoln. She is a member of the Academy of Nutrition and Dietetics and the Missouri Dietetic Association. Rebecca is personally and professionally passionate about health and wellness. She is excited to help the Liberty community become healthier and her passion is helping families' live healthier lifestyles and teaching children about the exciting aspects of food. She has experience with weight loss, diabetes, heart health, and intuitive eating. Her hobbies include cooking, being outside with her family, and enjoying new foods.

Counseling packages and the BEGIN program expire one year from date of purchase. A nutrition counseling session includes:

Comprehensive Nutrition Assessment – In a pre-consultation questionnaire, you provide details on your medical and nutrition background, food likes/dislikes, allergies, intolerances and nutrition concerns. Completion of the questionnaire along with information you provide during your session allows your Hy-Vee dietitian to customize a nutrition plan specifically for you.
Complete Dietary Analysis – Describe your typical daily dietary intake to help design a plan based on your current eating lifestyle.
Healthy Nutrition Resources – Shopping assistance/tips, recipes and on-line resources.
General Meal Planning guide to help you meet your nutrition goals.

BEGIN Healthy Lifestyle and Weight Management Programs - Contact for Pricing

 BEGIN is a healthy lifestyle and weight management program led by your Hy-Vee dietitian. In each of these one-on-one programs, the dietitian will work with you to promote healthy lifestyle changes while emphasizing weight loss, exercise and eating for good health. Additionally, the 10-session program includes a cholesterol and blood glucose screening at the beginning and end of the program to help you track your progress.

Call to schedule your screening today! Knowing your numbers is the first step to a healthier lifestyle. Visit your Liberty Hy-Vee to get an accurate reading of your cholesterol, high-density lipoprotein (HDL), low-density lipoprotein (LDL), triglycerides, total cholesterol, blood glucose, weight, blood pressure, BMI, and body fat percentage. Tests are administered by your Hy-Vee registered dietitian and results are given in just 15 minutes. Speak with the dietitian to discover ways to improve your health. Personalized Shopping Assistance - FREE
Struggling with what you should be putting into your shopping cart? Make an appointment with your Hy-Vee dietitian to take an aisle-by-aisle tour of the supermarket. The tour can be tailored to meet your specific needs, including diabetic-friendly, heart-healthy, gluten-free, low-sodium, weight management and more. KidsFit in the Kitchen - $10
Is your child curious about food and how it's made? Kids ages 5 to 11 are invited to help the dietitians whip up three delicious recipes! Kids take turns measuring and mixing and get to taste what they've made at the end of class. Handouts with the recipes are provided, including color-coded ingredients that align with the MyPlate food groups to educate kids on healthy food choices. Dietitian Meal Solutions - Prices Vary

Your Liberty Hy-Vee Dietitian wants to make healthy eating easy! There are many meal solutions that are offered!

Simple Fix Meal Kits - These meal kits include everything you need to make a meal for two all wrapped up in a neat little box! They will include all ingredients except for a few staple items, the recipes will change seasonally, and most only take 20-30 minutes to prepare!

Dietitian Lunchboxes - These are a healthy on the go lunch option! There are 5 different options of meals and they are available at the main store or our gas station!

Dietitian Energy Bites - These are a great option to kick that sweet-tooth craving with a healthy snack or dessert! There are multiple options of flavors and they are available at our main store or our gas station!
