    ¼ c. Hy-Vee finely shredded mild Cheddar cheese
    2 thin slices Dilusso double smoked ham, chopped
    1 tbsp. That’s Smart! vegetable oil
    ½ c. chopped red bell pepper
    ¼ c. chopped yellow onion
    Coarsely ground Hy-Vee Mediterranean sea salt, to taste
    Coarsely ground Hy-Vee black pepper, to taste

    Directions

    1. Preheat oven to 375°F.

    2. Whisk together eggs and milk in a large bowl. Stir in cheese and ham; set aside.

    3. Heat oil in a 10-in. cast iron skillet over medium heat. Add bell pepper and onion. Cook for 2 to 3 minutes or until softened, stirring frequently.

    4. Pour egg mixture over vegetables in skillet. Reduce heat to medium-low. Cook, uncovered, for 4 to 6 minutes or until edges begin to set.

    5. Transfer skillet to oven. Bake for 12 to 15 minutes or until center is set and edge is golden. Season to taste with salt and black pepper, if desired.
