    1. Mix together dry brine and rub over thawed turkey, including inside the cavity. Refrigerate up to 48 hours. 

    2. Remove the turkey from the fridge. Loosely stuff the cavity with citrus wedges and fresh herbs. 

    3. Fold the wing tips behind and under the turkey. Tie the legs together with kitchen string and transfer the bird to a roasting pan.
