Shannon Muhs

Shannon has been a registered dietitian since 1996. She is an involved member of the Academy of Nutrition and Dietetics at the national, state and local levels. She has served in elected leadership positions for both the state and local organizations. Shannon has worked for Hy-Vee, Inc. for the past 14 years. She has diverse experience to include weight management, IBS and the FODMAP diet, diabetes, food intolerances, menu writing and eating disorders. She has received advanced training on wellness coaching, adult weight management and the Low FODMAP Diet for Irritable Bowel Syndrome. She is a member of Integrative and Functional Medicine and makes it a priority to stay aware of trends and scientific research through further professional education and training.

Individualized Menu Planning & Nutrition Coaching $60 per hour by appointment. This service is for those wanting help with basic nutrition & weight loss or weight gain. Meet with Shannon to discuss your goals and you’ll work together to design a menu plan and set goals to help you achieve success. Follow-up sessions are encouraged for long term success.

Medical Nutrition Therapy is a personalized, detailed nutrition assessment along with education, recommendations, menu plan, and goals setting. Follow-up sessions are encouraged for long term success. Some diagnoses require a doctor referral. Talk with Shannon if you have questions. 1 individual consultation - $125 (60 minutes); 1 individual consultation - $62.50 (30 minutes)

Nutrition Walks – complimentary: Whether you are shopping to control diabetes, blood pressure, cholesterol or just to eat healthier, your Papillion Hy-Vee dietitian Shannon has experience and practical ideas to help you. Walks can be with individuals, small groups and/or family members. These walks are offered multiple times per week. Check the store website for times or stop by the dietitian office to schedule or call or email.

Lasting Results Weight Loss Program: This program includes calorie controlled or low-carb meal plans, regular meetings, realistic foods and low carb supplements if applicable. Initial cost is $129 - you’ll get a nutrition assessment, meal plan and shopping list. 12-week program. New meal plans are available every 2 weeks. Receive a coaching session (up to 30 minutes) with the Hy-Vee dietitian for no charge when you spend a minimum of $60 at your Hy-Vee location. This $60 must be spent on the food supplements and/or groceries that are part of the meal plan. Just bring and show your receipt. OR if you didn’t shop with us that week, you can still receive a coaching session for $30 without showing a receipt.

Nutrition Presentation: $250/hour + travel fee depending on location if you would like Shannon to speak to your group on a specific wellness or nutrition topic, please contact her for topic ideas and scheduling. Presentations can range from 20-60 minutes.

Birthday Party Cooking Class: $180 for up to 9 children ($20 per child after that) Shannon or Chef Keith will lead a cooking class for your child and friends. Choose from fun recipes and let the children enjoy a hands-on cooking class. Bring your taste buds; the meal will include an entrée, side and birthday dessert! Includes goodie bags for guests, paper ware, and water, set up, clean up, 2 hour time-frame. Contact Shannon or Chef Keith to schedule your birthday party at the Papillion Hy-Vee clubroom.

Cooking Classes: Variety of classes are offered each month, i.e. Kids Cooking, Sushi-Rolling, Teen Cooking, Instant Pot Cooking, Charcuterie, and Wine Pairings. Prices range from $15 per child - $50 per adult. Check the Papillion Hy-Vee store’s website for class offerings or pick up a flier in-store. Sign up and pay at customer service to hold your spot

Private Cooking Class for groups or families: $250 is the minimum charge. This will cover a group of 10 people. If you’d like more to join your group, it is $25/person, in addition to the minimum charge. Contact Shannon or Chef Keith Walsh to discuss a private cooking class idea for you and your friends or family.  

Individual Cooking Class with the Dietitian: $60/hour if you’d like to focus on just what you need to learn to be healthy, then schedule a private class.

Metabolic Testing: $65 by appointment: Do you need help losing weight or getting past the dreaded plateau? This painless, yet in-depth test will measure your resting metabolic rate and tell you how many calories you burn per day. You must avoid eating, drinking, and exercise at least 4 hours prior to testing. Avoid nicotine at least 2 hours prior to test.

Biometric Screening: $45 by appointment: Includes cholesterol, HDL, LDL, Triglycerides, glucose, blood pressure, body fat, BMI, waist and hip circumference. This test involves a finger-stick blood sample with results in minutes. This test requires a 10-12-hour fast.

Body-fat Percentage: $10 by appointment: Using the Omron Fat Loss Monitor, this device sends an infrared signal through your body to determine the percentage of fat tissue present. The body fat percentage is calculated by a formula that includes electric resistance, height, weight, age and gender.  This monitor cannot be used with a pacemaker or other implanted devices.

Corporate Wellness: prices vary: Contact Shannon if you'd like her to come to your company to do biometric screenings, metabolic testing, weight loss classes or a series of nutrition presentations. Flu shots administered by a pharmacist are also available. Call to discuss your companies’ needs.

Begin 10-Week Healthy Lifestyle and Weight Management Program - $290 - held one to two times per year.  Contact Shannon to see when the next class starts.  This course is a comprehensive approach to weight loss focusing on lifestyle change. Your Papillion Hy-Vee dietitian, Shannon, will meet individually with all participants the first week to discuss individual goals and perform a fasting biometric screening and body measurements. The remainder of the weekly meetings will be a combination of group settings and individual follow-ups. Some weekly topics include portion control, exercise, fat & sugar intake, healthy cooking and emotional eating.  Each participant will receive a fasting biometric screening and body measurements at the completiton of the program to show the results of all your hard effort.  Shannon's 25 years of experience will help guide you through this life-changing program with success!  Now is the time to "BEGIN" the rest of your life. 

Begin 8-Week Basics: $200 This is an 8-Week Healthy Lifestyle and Weight Management Program without the pre and post biometric screenings. If there is not a group session scheduled, these would be individual sessions lasting 15 minutes.
