Beth Barber

Beth Barber, RD, LD, received her Bachelor of Science degree in Dietetics from Iowa State University in May 2000. She chose dietetics because she was passionate about nutrition and well-being at a very early age. Her mother taught nutrition at the high school level, so she learned to read food labels very early!

Beth completed her dietetic internship through Iowa State University in 2001. Her first job was working for eight years in clinical nutrition at Allen Hospital in Waterloo, Iowa, where she predominantly taught diabetes and cardiac nutrition to her patients. At the same time, she also worked for Operation Threshold WIC, where she specialized in prenatal nutrition and breastfeeding education. Her Hy-Vee journey began in May 2012 as the dietitian for two Waterloo Hy-Vee locations, Ansborough Avenue Hy-Vee and Logan Avenue Hy-Vee. After a two-year expatriate assignment in France, and two more wonderful years at Logan Avenue Hy-Vee, she is now excited to restart her journey at Ansborough Avenue Hy-Vee.

Her goal is to support the health and well-being of her community with enlightened eyes. Living in the French culture, sharpened her awareness of cultural influences on health and nutrition, body image and self-control. Beth's passions include teaching children about nutrition, researching the gastronomy and meal patterns within cultures to individualize clients' healthy meal plans, and helping those with medical conditions find the medicinal foods that will help them feel better and live longer.

Hours: Beth is available Mondays, Thursdays and Fridays 8:00 a.m. to 4:00 p.m. Evening consultations are available by appointment. Please note that the schedule may change due to nutrition programs and events. Please call ahead to ensure her availability: 319-233-3266 ext. 164

Enjoy an aisle-by-aisle tour to discover healthy new food choices. Tour topics may include healthy shopping, heart-health, diabetes, weight management, superfoods and food allergies. Perfect for individual or groups!

Shopping Assistance for Health (Complimentary - By appointment):
Take a walk through the aisles with your Hy-Vee dietitian. Find health-promoting foods that appeal to you, receive meal ideas and recipes for how to enjoy these foods and learn how to enhance your health by putting favorable foods in your cart and in your body!

Medical Nutrition Therapy ($62.50 per 1/2-hour or $125 per hour):
Doctor referral is required. Book an appointment with Beth and get 30 minutes of free shopping assistance! This is a one-on-one visit to develop a personalized plan and achievable goals that will help you manage your nutrition-related concerns. Topics may include weight loss/gain, high blood pressure, diabetes, food allergy/intolerance, high cholesterol or other nutrition concerns.
